Lately, my go to supper dish has been Chicken Pasta Bake. It's 5 ingredients, and takes about 30minutes to prepare & cook.

Okay here goes:
Chicken Pasta Bake(Adapted from a recipe by Leggo'sTM)
3 cups short pasta (I like Orecchiette - but you can use any)
1 cup BBQ or Roast Chicken, shredded
500g jar of pasta sauce
Sweetcorn kernels or frozen peas (optional)
1 cup cheese, grated (I usually use Mozzarella)

Pre-heat oven to 200deg.C
Cook pasta according to packet directions and drain.(I microwave my pasta, so have just realised this step will take longer if you have to boil the water first.)
Mix hot pasta with chicken, sauce and corn/peas(if using) in an ovenproof dish.
Sprinkle with grated cheese.
Place dish in oven and bake for 20 minutes or until golden.

I get 4 serves from this recipe, but I think it would stretch to feed 6, if you had a salad, or an entree with it.

Thanks for that Lioness.

I make a similar one using tagliatelle and chicken - but I add condensed chicken soup with some fresh spinach to the mix (instead of pasta sauce). Very lovely and very quick.

Taco Cassserole based on idea by LivingMemory, quantities by Lioness.
Ingredients
Olive Oil Spray
2tbsp Olive Oil
2 x 175g packet corn chips
500g mushrooms, sliced
1kg beef mince
400g diced tomatoes
375g (Tomato)Salsa
2tsp paprika
300g Mozzarella Cheese

Method
1) Preheat oven to 180 to 200 degrees.
2) Grease a Large Roasting Pan with Olive Oil spray.
3) Distribute one packet of corn chips over the base of the roasting pan. Then layer half the meat filling over it, then sprinkle half the cheese over it.
4) Repeat step 3.
5) Bake in Pre-heated oven for 20-25 minutes.

Meat Filling
1) Heat Olive Oil in a large saucepan (or a wok).
2) Add mushrooms to the pan, cook, stirring for a fw minutes.
3) Add mince, cook for 8 minutes, or until meat is browned.
4) Add diced tomatoes, salsa and paprika to the pan.
5) Cook 2 mintues, or until heated through.

This makes 6-8 serves, you could probably halve the quantities and use a smaller dish to bake the casserole in. I don't think this would freeze well, as I think the corn chips would get "too mushy".
